On my radar... March 2012

Hello!

This month I'm not doing clothes, accessories mostly, but also some other things you've never seen on an On My Radar before, mostly because I just discovered them, lol.


Forever 21:





Asymmetrical Zip Hobo:

I'm really into bags lately, and I'm not quite sure why...I know I need one to carry around with me as "my purse," with my wallet, phone, and keys. I like the color of this one, and it looks like it would be good to use when I go shopping. It has a shoulder strap and a cross-body strap, so that's good. I really like this.










Chain Strap Crossbody:

Another possibility for my purse. I like the color on this one too; bold colors are kind of my thing. :)  This looks a lot smaller than the blue one, but it has some neat side pockets. I like the chain accents too.



Bull's Eye  Floppy Hat- Orange/Natural:

I love this hat! I wasn't even looking for a floppy hat like this,(I didn't even think I'd like a hat like this,) but I have to have it! I'm going to the beach this June and I found a great coverup at Target and this hat totally completes the look. I'm going for the quintessential floppy-hat-with-flowing-cover-dress-thing-and-big-sunglasses-look, and, in my opinion, this nails it.

Polka Dot Oxfords:

Oh my god. I think I may have died. POLKA DOT OXFORDS. There is nothing more perfect on this entire earth.

I love polka dots. And oxfords. These shoes are wonderful. Enough said.






Striped Platform Wedges:

I like wedges too. They're very springy. Black and white stripes are cool. These shoes are funky, but in a good way.






Studded Crossbody:

Yet another choice for "My Purse." I like how this one is very classic. The cream color would make it compatible with pretty much every outfit, and I like that. That could be a disadvantage too though- I like colorful, bright, statement-making bags.

All in all, I'm liking this one the most.




Triangle Necklace:

I'm totally obsessed with pendant necklaces right now. I love them. I can see myself wearing this one a lot, it's pretty basic.









Polka Dot Fringe Scarf:

I like scarves...Maybe a little too much.. These are no exception. Aren't they just darling? And the best part? The mint one has a matching bracelet set!

I LOVE THIS! I probably sound like some crazy internet junkie, but this website is so cool. I get tons on outfit, and hair ideas form looking at everything. Fabulous.


HOBBY LOBBY:

We just recently got one of these stores in my town, (Hicktown, USA) and I cannot get enough. I've been there at least 5 times already. They have everything pertaining to arts and crafts a person could ever want, and more--a baking section. Be still my heart.



Fishtail/Herringbone Braids:

I've always loved this style of braid, but it looked soo complicated to do, so I never tried it. Well, my friend Tabitha is really good at braiding hair like this, and she was kind enough to teach me how! It's super easy. I do this all the time. It's a great twist on your everyday braid.








Melted Crayon Art:

I must say, this is one of the coolest things I've ever seen. It started with someone putting a picture of a creation like this on Pinterest, and now countless people have done it. You can Google "melted crayon art" and find tons of pictures and websites with instructions. The one to the left is one of mine. I've done about 5, haha. :)








Neon Patent Heel, from Charlotte Russe:

I like neon. :) These look awesome, 'nuff said.

I've just discovered Polyvore. Holy fashion, Batman.

Coming Soon to Theaters...

Okay, not really to theaters. Just saying hey, and letting everyone know about the lovely posts that are on their way. Let's see, we have...

Chicken Enchiladas Recipe!

Everyone loves enchiladas, right? I know my family does. This is a recipe my mom has made us for as long as I can remember, one she got from her friend Beth. It's amazing, and I made it the other night, so I thought I'd show you!


Boil 2-3 boneless chicken breasts. (I did 3, because we like leftovers. :))

Oil. Onions. Herbs. Off to a good start.


Beans, cheese and tomatoes. Even better!

Mush that all up with a potato masher, like so:

And then add the shredded, boiled chicken.

Mix that all together and then stuff the mixture into tortillas. I got about 6 from this recipe, it depends on how much you like to put in one. (To help the tortillas stay shut I made a "glue" with flour and water and just slathered some of that on the outside. It worked pretty well.)

In a separate bowl mix cream, chicken broth and sour cream, then pour over the tortillas, in a pan coated with cooking spray and top with the remaining Monterey Jack cheese:

 Cover with foil and bake at 350 for about 40 minutes.

Remove the foil and bake for 5-10 more minutes, remove. Let them cool, and serve with some yummy rice.


Voila! Mmm, Mexican food. :) Enjoy!

Beth Roman's Chicken Enchiladas

6-8 flour tortillas
1 can/15 oz. white beans- rinsed, drained
1 can/8 oz. tomato sauce OR petite diced tomatoes
1 can/4 oz. diced green chiles
1 onion
2 cups cooked chicken breast (optional)
8 oz. Monterey Jack cheese, divided
1 tbsp. olive oil
1 cup heavy cream
1 cup sour cream
1 cup chicken stock
1 tsp. minced garlic
1 tsp oregano
1/2 tsp. salt
  • Heat oven to 350.
  • Heat oil in pan. Add onions, and garlic. Heat until soft, about 5 minutes.
  • Add beans, mash up.
  • Add tomatoes, chiles and spices. 
  • Add 3/4 of cheese.
  • Add chicken, if using.
  • Mix well and divide into tortillas. Place filled tortillas in 9 x 13 pan coated with cooking spray.
  • In separate bowl mix cream, stock and sour cream.
  • Slowly pour cream mixture over tortillas. 
  • Top with remaining cheese.
  • Cover with foil and bake for 40 minutes.
  • Remove foil and bake for 5-10 more minutes, or until top is slightly brown.
  • Let stand 10 minutes.
  • Serve with rice.
